Open Season Catering Brings Wild Game To the Food Truck Craze

Wild game and comfort food are two phrases that are typically not used together. Open Season Catering of Warwick, however, has managed to do just that and is winning awards for its creative menu that puts an emphasis on wild game and locally sourced meats and seafood. If you've never sunk your teeth into an elk hotdog or a bison burger, owner and chef David Livesey is more than happy to hit you up.

"I want to share with everybody the foods that I have grown to love in ways that are both adventurous, delicious, and surprisingly comfortable," he said. "Food should be fun. I love to educate the public about the importance of alternative proteins."

Livesey, an avid hunter, fisher, and outdoorsman, earned his culinary degree at Newbury College before traveling and studying food and wine throughout Europe. He worked as an executive chef and catering chef in the hospitality industry before launching his own company. His mission through Open Season Catering is to show the public how wild game meat can be tasty and versatile and not something to be afraid of trying.

"Occasionally, I get to witness someone's first bite of venison or elk," he said. "And the smile that ensues makes my job 100 percent worth it."

The company's catering menu contains options for appetizers, buffets, executive luncheons, and more. Open Season Catering also serves what it calls an elevated game dinner featuring smoked duck and roasted venison loin that may be served family style or as a buffet. The fully equipped food truck usually serves up pulled wild boar quesadillas, venison chili, duck poutine egg rolls, and other wild game delicacies.

Vegetarians haven't been forgotten, either. The Lousy Hunter sandwich combines a black bean burger with cheese, avocado, and sriracha aioli in a pressed wrap, and Open Season's chili cheese fries are always a hit with a crowd. Livesey likes to round out his offerings with Italian and Southwestern inspired dishes, and menus can be customized for any event.

"Our catering services cover all spectrums of the culinary world; BBQ and continental favorites are our specialty," he said. "We also have award winning seafood to top it all off. Whether a mansion wedding with all the bells and whistles or a backyard pig roast, we are experts in all things food."

His truck participates in several food festivals and farmer's markets in Rhode Island during the year, and is also available to rent for private functions. Livesey says that Open Season Catering is growing, and encourages customers to follow the company on its social media channels to keep up with the food truck's locations and menus.
