The Shuckin Truck Is A Delicious Seafood Food Truck

The Shuckin Truck is very Rhode Island. Serving fresh Rhode Island seafood, including a mobile raw bar, at myriad events, The Shuckin Truck sells local seafood to the hungry masses of the Ocean State. Dave Roebuck II, owner, answered some of our questions about his popular truck.

What separates your business from competitors?

What separates us from our competition. First, our competition are other caterers and other food trucks/vendors. We have an advantage because we own the oyster farm and my family members own the fishing boats we get our seafood from, so our cost is lower so we can provide a fresher product for a cheaper price. Plus, we are the only oyster food truck that I know of which puts us in a class by ourselves.

How would you describe your menu?

We try to provide at least six different Seafood options. We do a nice seared scallop roll topped with bacon pieces and aioli dressing, a fan favorite traditional lobster roll and blackened fish tacos depending on what fish is available. We also set up a raw bar outside of the truck and shuck our salt pond Oysters and clams that we harvested the same day from our oyster farm in Point Judith pond. We also run specials like oyster Rockefeller, lobster grilled cheese, or fried oyster po boys.

What else would you like to convey to the public about your business? What do you enjoy about your job?

I love being on the water. I grew up lobstering with my dad, Uncle, and brothers as a summertime job. Later on, I fished for five years on my brother Chris's Boat the karen Elizabeth (named after my mom) catching squid and ground fish. When I started the oyster farm in 2002, it was something that I could do on the water and still be home every night.

When I started the Shuckin Truck I had no idea what to expect. I knew I had the best resources for fresh seafood, so it was just a matter of creating a menu And figuring out a way to cook and serve it in a short amount of time. Oysters and food trucks are very trendy so I was confident in the business model.
